Our story begins with family.

Before refrigerators, Koreans fermented foods like kimchi, doenjang, and soy sauce in traditional clay jars called onggi. Made from earth and known to “breathe,” these jars naturally enhanced fermentation, creating deeper, more refined flavors.

My grandmother, born in Seoul, carried on this tradition. With limited space, she kept her onggi in a cool, airy basement, where she perfected a clean and delicate Seoul-style kimchi. More than anything, she taught us that exceptional flavor comes from quality ingredients and uncompromising standards.

Today, the onggi she once used rest quietly in my father’s garden—but her spirit lives on in every jar we make.
